The pressure to use wine or spirits in cooking is part of a campaign to promote the sale of alcoholic liquor, to put pressure on the housewife to introduce it into the home, and thus to make it an accepted product on the pantry shelf.
- Children will look on it as just another grocery item.
- Because it affects the home in so many ways let us discourage the idea that the use of alcohol is a normal part of living.
- Wine or spirits are often suggested as ingredients in foods which are not cooked after making - truffles, trifles, etc. - so
the alcohol, as well as the flavour, remains.

- When making SULTANA CAKE, boil the sultanas in lemonade instead of in sherry and water.
- Here is a simple RECIPE FOR TRUFFLES made without any alcoholic ingredient:
Crush 250gms (8oz) Marie biscuits, and mix well with 1 tin condensed milk, 2 level tablespoons cocoa, 1 teaspoon vanilla. Roll into small balls or logs and roll in coconut.
Store in refrigerator.
- It is usually the acid content in the wine which is needed in the cooking, and lemon juice, or white vinegar would supply this adequately.
- Any fruit juices can be used, but there are occasions when other substitutes are more satisfactory.
- In SOUPS and STEWS, instead of suggested wine or beer, use chicken or beef stock.
- In CURRY, use pineapple juice.
- In TRUFFLES, replace the rum with vanilla essence.
- For CLARET APPLES, use non-alcoholic cider and cloves instead of claret.
- Maple Syrup or sieved apricot jam can adequately replace rum in PANCAKES AU RHUM.
