Medallions of lamb, herb cream sauce

Serves:  4 people
Prep time: 25 minutes

Ingredients:

16 of lamb, cutlets
salt, pepper
2 tsp butter

Herb Cream Sauce
1 of onions, medium
50 ml white wine
1 cup gravy mix
100 ml cream
50 gm butter
1 tblsp fresh herbs, chopped

Method:

  • Heat pan, add butter and pan fry the seasoned lamb medallions 3 minutes each side over high heat. Remove from pan and keep warm.
  • Herb creamSauce:
  • Lower heat, add a small amount of butter and gently cook onion 2 minutes to soften. Add wine, gravy, cream and herbs, bring to the boil.
  • Add cream and reduce to required consistency. Whisk in a small piece of butter and correct seasoning. Just before serving add the chopped fresh herbs.
  • To serve, place the lamb in a serving dish and coat with the herb sauce.
