Medallions of lamb, herb cream sauce

Herb Cream Sauce
| 1 |

onions, medium |
| 50 |
ml |
white wine |
| 1 |
cup |
gravy mix |
| 100 |
ml |
cream |
| 50 |
gm |
butter |
| 1 |
tblsp |
fresh herbs, chopped |
Method:

Heat pan, add butter and pan fry the seasoned lamb medallions 3 minutes each side over high heat. Remove from pan and keep warm.

Herb creamSauce:

Lower heat, add a small amount of butter and gently cook onion 2 minutes to soften. Add wine, gravy, cream and herbs, bring to the boil.

Add cream and reduce to required consistency. Whisk in a small piece of butter and correct seasoning. Just before serving add the chopped fresh herbs.

To serve, place the lamb in a serving dish and coat with the herb sauce.
