Meatloaf

Serves:  4 people
Prep time: minutes

Ingredients:

300 gm minced beef
300 gm sausage mince
1 cup breadcrumbs, fresh
1 cup milk
2 of eggs
1 of onions, medium
1 of carrots, medium
1 tblsp flour, plain
salt, pepper
3 slice bacon
1 cup Tomato juice

Method:

  • Pre-heat oven to 350F/190C degrees.
  • Finely dice onion. Peel and grate carrots.
  • Soak breadcrumbs in milk.
  • Mix meats, soaked bread crumbs, eggs, onion, carrot and flour together with the hand. Beat with a wooden spoon until mixture appears light and frothy. Add salt and pepper to taste.
  • Form the mixture into a loaf in a baking dish. Put the bacon on top, and bake for about 1 1/2 hours. Baste several times during baking with the tomato juice. Slice thinly.
