Chicken saute with mushrooms and tomato

Serves:  4 people
Prep time: 40 minutes

Ingredients:

1.5 kg chicken (breasts, legs, thighs)
1 cup onions, medium
2 cups mushrooms
60 gm butter
1 tblsp olive oil
4 gm tomatoes
1 cup white wine
1 cup gravy mix
1 tsp fresh herbs, chopped
salt, pepper

Method:

  • Dice onions, tomatoes. Slice mushrooms.
  • If using a whole chicken cut into pieces (legs, breasts, thighs, wings) and season well.
  • Melt butter and oil in pan, add chicken, and cook until chicken is browned, turning often. Transfer to ovenproof dish.
  • Add chopped onion and mushrooms to pan and cook a furthur 3 minutes until softenned. Add tomatoes, wine, gravy, tarragon, salt and pepper. Mix ingredients to combine and bring to simmer 1 minute. Pour over the chicken.
  • Cover, bake in moderate oven 370F/185C for 40 minutes or until chicken is tender.
  • Finish with chopped herbs.
