Brussel sprouts in beer batter

Beer batter

beer |

Method:

Trim brussel sprouts and remove any wilted or damaged outer leaves. Plunge into into a large pot of boiling salted water and cook until tender and

bright green, about 10 minutes.

Drain well and season with salt and pepper.

Heat frying oil to 190C/375F. Dip sprouts into batter, shake off excess and deep fry until golden.

Drain and serve immediately with homemade tomato sauce.

Beat egg in a bowl, add beer and beat until smooth.

Add flour and salt and beat until smooth.

Allow batter to rest for 30 minutes before using.
