Brussel sprouts in beer batter

Serves:  4 people
Prep time: 20 minutes

Ingredients:

800 gm brussel sprouts
salt, pepper
oil for deep-frying

Beer batter
1 of eggs
1 cup beer
1 cup flour, plain
1 pinch salt

Method:

  • Trim brussel sprouts and remove any wilted or damaged outer leaves. Plunge into into a large pot of boiling salted water and cook until tender and
  • bright green, about 10 minutes.
  • Drain well and season with salt and pepper.
  • Heat frying oil to 190C/375F. Dip sprouts into batter, shake off excess and deep fry until golden.
  • Drain and serve immediately with homemade tomato sauce.
  • Batter:
  • Beat egg in a bowl, add beer and beat until smooth.
  • Add flour and salt and beat until smooth.
  • Allow batter to rest for 30 minutes before using.
