Tabouli Salad |

I am Lebanese. When I was a little girl, my mum taught my two sisters and me how to sew and how to cook. The dish I was most interested in learning about was tabouli salad. It is a special dish. It is served for the first course, especially in summer. We have this dish twice a week in summer, because it is especially good on a hot day. If we have a visitor, tabouli salad is the first dish on the table. Tabouli salad is filling and healthy. |

quarter of a cup of bulgar wheat 4 firm tomatoes 2 bunches continental parsley bunch spring onion 1 bunch fresh mint 1 cucumber 2 tablespoons olive oil juice of 1 lemon salt pepper |
Dip the bulgar wheat in water and remove immediately. Strain the water out and put the wheat aside. Chop the tomatoes, parsley, spring onion, mint and cucumber. Put everything in a bowl and add the olive oil, lemon juice, and salt & pepper to taste. Serve with cos lettuce or with pita bread. |
