Shepherds Pie |

My Mother did most the cooking for the family. She didn’t like making shepherd’s pie because it wasn’t adventurous enough. I liked it because it was tasty, so it was a real treat to have shepherd’s pie at home. Growing up in the 70’s, it was a new thing for men to do the cooking. I believe that cooking is a form expression of creativity and sharing and the great thing about it is that it gives you instant gratification. Like most of my cooking I make up the recipe as I go along. Recipes should evolve and be different every time you try them. This dish is a peasant’s dish. Its basically meat and potatoes that you can eat hot or cold. |

kg mince meat a few capsicums and any other vegetables that you have lying around. Tomato sauce or paste ( in this case I make my own tomato salsa). A dozen good potatoes, like pontiacs. 3 eggs garlic salt and pepper to taste |
Brown the mince. Add vegies and tomato sauce until you have a rich thick brown sauce. Cook potatoes in water till soft. Mash with eggs, garlic, salt and pepper. Drop meat in the bottom of a casserole dish. Slap mashed potato on top Sprinkle cheese and or paprika for colour and flavour. Bake in oven until top is brown. I sometimes serve Shepherd’s pie with a dish of brussel sprouts, chestnuts and mustard. Delicious! |
