Roast Pork

I am from Greece. In the 1960's we did not have much money to spend, so my mother grew all the food she needed and made everything at home. In the kitchen my mother used a firewood stove to do all the cooking. Next to the kitchen was the dining room. In it was a dining table for twelve people which my father made. Occasion: When is this dish served? On special occasions such as Christmas and Easter, a lot of people came to the house and my mother would cook all day. This recipe was taught to me by my mother. She cooked a roast pork leg for Christmas dinner. I always helped my mother cook it. I still cook this meal.

Ingredients

Method

One leg of pork 

1 tablespoon honey 

1 orange, squeezed for juice 

1 glass of white wine 

3 tablespoons oil 

4 garlic cloves 

1 teaspoon black pepper 

4 bay leaves 

2 tablespoons salt 

2 kilos potatoes

First, clean the leg of pork. Mix the oil, honey, orange juice, and wine. Then make holes in the pork, using a knife and put the mixture of black pepper, salt and garlic cloves in each hole.

Pour the oil, honey, orange, and wine mixture over the leg of pork.

Place the pork in a baking pan, and cook at 230 degrees C for three hours. Then place the potatoes in the pan and cook for another half hour.

Serve when ready. 

This dish is usually served with green salad.
