This is one of the most famous and best loved Greek dishes of all time. The recipe comes to us from a member of the Port Melbourne Greek Senior Citizens’ Club, where it was prepared with the assistance of several of the women members. |

1 kilo zucchini 10 to 12 medium potatoes 2 large eggplant oil for frying 1 kilo mince (beef, or 500 grm. beef + 500 grm. lamb) 2 onions, grated 1 400 grm. can tomatoes 1 small can tomato paste teaspoon black pepper 1 cup water 1 box cornflour (375 grms.) 2 litres milk ( = 11 cups) 6 eggs 2 teaspoons ground cinnamon |
Slice the eggplant lengthwise. Sprinkle slices with salt to draw out the bitter juices. Leave one half hour. Grate two onions. Put in large pot with mince, tomato paste, and tomatoes. Add water and pepper. Bring to boil and simmer for about twenty minutes, stirring frequently to break up the tomatoes. Dry the eggplant in preparation for frying (it is not necessary to rinse off the salt). Slice the zucchini lengthwise. Peel and slice the potatoes. Pour about a centimetre of oil in fry pan. Heat and then add one layer of vegetables. Cook until golden brown, turning once. As vegetables are cooked, remove them from fry pan. Continue until all vegetables have been cooked, adding oil as necessary for frying. To make the cream sauce, put cornflour in a large pot. Gradually add milk, whisking to keep the mixture smooth. Bring to boil, and then simmer for several minutes, stirring constantly. Beat eggs together in a bowl, and then add all at once to centre of cornflour mixture. Continue to stir until well blended. Take two large baking pans, and cover bottom of each with cream sauce. Place layer of vegetables on top of the sauce. Cover with a layer of meat sauce. You will need to use the meat sauce sparingly in order to have enough to complement the given amount of vegetables. Add more cream sauce and repeat the vegetable and meat layering process. Plan your layers so that you end up with a layer of cream sauce on top. Place in oven preheated to 180 degrees. Bake for about one and one half hours, or until nicely browned on top. |
