Lentil Soup |

I learnt this dish from an Egyptian friend when I went to Egypt. I was 18 years old. As migrants, we were short of money, and I served it nearly every day. It is cheap, delicious and healthy. |

1 cup of lentils 1 onion 1 carrot 1 tomato 1 potato 1 tablespoon crushed garlic 1 soup cube (chicken or beef) |
Grate the onion and carrot. Cut the tomato and the potato into small pieces. Wash the lentils. Mix all the ingredients, including the garlic, and put the mixture in a pot. Cover with water, and boil until cooked. Strain the mixture, and add the soup cube. If the soup is too thick, add water. This dish can be eaten as a soup or some broken toast can be added to make a lentil pottage. This dish is used in winter to make one feel warm and to give energy. For this reason, it is eaten by soldiers in the army. |
