Lentil Soup

 

I learnt this dish from an Egyptian friend when I went to Egypt. I was 18 years old. As migrants, we were short of money, and I served it nearly every day. It is cheap, delicious and healthy.

Ingredients

1 cup of lentils

1 onion 

1 carrot

1 tomato

1 potato

1 tablespoon crushed garlic

1 soup cube (chicken or beef)

Grate the onion and carrot. Cut the tomato and the potato into small pieces. Wash the lentils.

Mix all the ingredients, including the garlic, and put the mixture in a pot. Cover with water, and boil until cooked. Strain the mixture, and add the soup cube. If the soup is too thick, add water.

This dish can be eaten as a soup or some broken toast can be added to make a lentil pottage. This dish is used in winter to make one feel warm and to give energy. For this reason, it is eaten by soldiers in the army.
