Kataifi

Method

375 grams Antoniou kataifi pastry 

200 grams melted butter (unsalted) 

1 cup ground almonds or walnuts 

1 teaspoon cinnamon 

½ teaspoon ground cloves 

¼ cup castor sugar 

1 egg white

3 cups sugar 

3 cups water 

1 tablespoon lemon juice

Combine ground almonds or walnuts, sugar, cinnamon, and cloves in mixing bowl. 

Add lightly beaten egg white. 

Remove kataifi from packet and shake lightly to separate pastry sheets, making it easier to handle.  There are approximately 12 rectangles per packet. 

Place 1 tablespoon of nut mixture at end of the rectangle and roll sides and ends toward the centre. 

While rolling, brush melted butter over pastry. 

Bake in low moderate oven (160 degrees Centigrade) for 40 minutes.

For syrup, combine remaining ingredients in saucepan and boil for 20 minutes.

Pour cool syrup over hot kataifi, and then cover tightly with foil until cool and soft.
