Hutspot

 

I am from a small town in the middle of Holland. I come from a big family, 19 children. Eleven are still alive. Mum died when she was 89. It was a very happy family. When we made dinner, we prepared big quantities of things, e.g. 4 cauliflowers, 4 swedes. The name of the recipe is Hutspot. In Holland we had the hot meal in the middle of day. My mother prepared the main dishes, the girls who were still at home helped with the vegetables and did the dishes, of course. We had Hutspot once a week on Wednesday, because minced pork was on special on Wednesdays. Papa would call this dish, ‘poor man’s food’, because the main ingredient is potatoes.

In Holland we used to eat some form of pork every day. I told my mother if I ever get married, I will never eat pork again. This dish is supposed to have pork, but in my recipe I have substituted beef. 

This is a simple dish, served as the main dish at the midday meal.

Method

2 kg. potatoes 

3 onions 

3 carrots a piece of beef (not expensive cuts) 

butter 

a little milk

In a heavy based saucepan brown the beef in lots of butter, after adding salt and pepper. 

Add 2 sliced onions and cook, covered, over a small flame for about one and a half hours. 

In a second saucepan add the third sliced onion and all the carrots. Saute for 10 minutes. Then add the peeled and quartered potatoes. Cover with water and cook until soft. 

When cool, mash the potatoes with hot or cold milk, and a little butter. 

Serve with the cooked beef thickly sliced. 

Josie told us that it was a Dutch custom to pickle cabbages for the long winter period when there were no fresh vegetables. When a girl had her period, she was not allowed to take part in the pickling process.
