Cheese Cake |

I am from Hungary. After the Second World War, everybody was very poor. When I was a little girl, every Sunday my mother would bake a special cheesecake, called a 'Cheese Pillow'. All my extended family would come for afternoon tea. We would laugh and talk, and spend our Sunday together. I have baked this recipe ever since. |

1 egg 250 grams plain flour 250 grams unsalted butter 250 grams cottage cheese 1 cup white sugar grated lemon rind from 1 lemon |
In a large bowl, mix the flour, butter, egg, and white cheese gently together. Add the sugar and grated lemon. Form the dough into flat cakes. Make a cut in each cake 1 and a half centimetres in diameter, and fill the inside with apricot jam. Place the cakes 3 centimetres apart on greased baking sheets. Bake in a slow oven (190 degrees C) for about 20 minutes, or until cakes are a pale golden colour. |
