Barramundi Trout

We spoke to Tom at the 1999 Port Phillip Multicultural festival just before he set off to Germany to play didgeridoo concerts for eight weeks. I’m from beyond the black stump, Ngukurr in the Northern Territory.

I learnt this recipe by watching my mother cook. I have been hunting since I was a small child in Arnhem land. Today when I go home, I still hunt. Traditionally, members of the tribe would hunt for the fish in this recipe. It might take all day to catch the fish. It depends on the season and the level of the waters. The women would prepare the fish.

 

Ingredients

Method

Tea tree - 3 or 4 leaves

Some light coloured trout

Bark of the tea tree to wrap around the fish

Seasonal berries

Bake fish in a pit oven.
