PUMPKIN BASIL & TOMA TO FRITTATA

INGREDIENTS:
2 cups grated pumpkin
1 onion - finely diced
1/2 cup sliced fresh basil
2 tomatoes - slices
1 cup grated cheese
6 eggs
1/2 cup milk
Salt and pepper


METHOD:
1. Heat a little oil in a pan and saute the onion until soft.

2. Beat the eggs and milk in a bowl. Add the pumpkin, basil, half the cheese and some salt and pepper.

3. Mix well. Pour the mix into a greased and lined baking dish. Lay the tomato slices over the top and sprinkle the remaining cheese over the top.

4. Place into the oven at 200degC for about 35 to 40 minutes. It is done when it is firm to touch.

5. Remove from the oven and let it sit for 10 minutes before slicing to allow it to settle. Serve with salad.
